The cold extraction process allows the coffee to steep for 12-24 hours. This makes for a smoother, sweeter cup of coffee with less acid.

Some coffee drinkers prefer cold brew over hot coffee, as its lower acid content is generally easier on the stomach. You can also adjust the strength of your cold brew by adding water. 

This type of coffee is perfect for those looking for a boost -- a cup of cold brew coffee typically yields about 600mg of caffeine, whereas the same amount of hot coffee tends to yield 160-180mg, depending on the hot brew method and beans used.
